The Global Chef offers the personal chef and catering menu below which will be customized to your tastes and dietary needs. if you have a dish to request, The Global Chef can make it all!


The Chef's recommendation is for a group to try a variety of small plates from around the world. The personal chef and catering menu is available in Minneapolis, St. Paul, Twin Cities, Minnesota, and Western Wisconsin. 


ASIA
Chinese

Peking Tofu Soup: Pork, shitake mushrooms, bamboo shoots, and eggs.
Won Ton Soup: Chicken broth base with shrimp and pork wonton garnished with green onion.
Dan Dan Noodle Soup: Spaguetti noodles with sesame oil, ginger, garlic, peanuts, and green onion.

Dumplings: Your choice of pork, shrimp, or chicken, served with soy dipping sauce.

Steamed Fish: Whole fish or fillet steamed with ginger, green onion, garlic, chili flakes, and soy sauce.

Stir Fry Fish Fillets: Cat fish fillet served with a reduction of garlic, green onion, ginger, soy sauce, and wine, served over steamed rice.

Honey Walnut Shrimp: Fried battered shrimp tossed in a honey walnut syrup, served with white rice.

Sesame Chicken: Chicken bites tossed in sesame sauce, served with fried or steamed rice.

Mongolian Beef: Stir fry beef sautéed with garlic, soy sauce, sesame seeds, and chili flakes.
Sweet and Sour Beef Tips: Baked beef tips served with sweet and sour sauce.

Pork Tenderloin Stir Fry: Sauteed tenderloin, broccoli, red and green pepper, carrots, and soy sauce.


Indian
Potato and Cilantro Fritters: Deep fried potato bites, served with hot tomato dipping chutney.

Shana Masala: Chickpea curry, served with basmati rice, batura bread, and papadamus.

Samosas: Pastry filled with ground lamb, served with cilantro mint chutney and red curry.
Shrimp Fritters: Deep fried crispy battered shrimp with cilantro chutney.

Seafood Congie: Fresh seafood mixed in light ginger broth with veggies.
Goan Fish Curry: Delicious white fish bathed in creamy curry .
Deep Fried Fish: Spiced battered fish with cilantro chutney.

Chicken or Shrimp Vindaloo: East Indian plate made of a delicious combination of tomato, spices, and tamarind pulp.
Chicken Jalfrezi: Chicken fajitas spiced with a Manju’s curry paste, served with hot naans.
Tandoori Chicken Bites: Chicken kabobs marinated in a spiced yogurt, served with cilantro chutney, and pico de gallo.
Bolinhas de Carne: Goan pork meatballs in spicy curry, served with basmati rice.
Raan Masaledaar: Roasted lamb with warming spices.
Lamb Meatballs: Northern of India koftas, flavored with spices, topped with cream and almonds.
Ground Lamb Kabobs: Served with cucumber relish, tomato, onion, and chili.
Haryaly Aloo: Baltered style potato flavored with mint, cilantro, onion, and ginger.
Maharashtrian Lentils: Simple lentil stew flavored with turmeric and asafetida.

Thai

Som Tam: Thai green papaya salad with cherry tomato, green beans, in a garlic, sugar and fish sauce topped with peanuts, cilantro, and lime wedges. 

Kuay Tiew:  Pork broth noodle soup with pork meat and bean sprouts.

Tom Yam Goong: Herb spiced soup, fish sauce, and jumbo shrimp served with jasmin rice. 
Tom Kha Gai: Chicken soup with coconut milk, lemon grass, and ginger. 
Goong Hom Sabai: Deep fried jumbo shrimp wrapped in wanton with spring roll dipping sauce. 
Choo Chee Fish: Fish Fillet served on coconut rice with red curry sauce. 

Geng Kheaw Wan Gai: Green curry chicken.

Khao Pad: Thai fried rice with shrimp or chicken. 

Pad thai: Stir fry rice noodle  and your choice of meat, topped with cilantro, peanuts, green onion, and bean sprouts.

Gai Med Ma Moung (Chicken Cashew Nuts): Stir fry chicken, onions, peppers, water chestnuts, green onions, and cashews.
Massaman Curry: Your choice of beef or chicken  with curry made of coconut milk, cinnamon, potatoes, roasted peanuts, bay leaves, and tamarind pulp.

French

Grilled Shrimp Panzanella: Salad with grilled shrimp, French bread croutons, tomatoes, and fresh basil, in a lemon zest and olive oil vinaigrette.

Classic French Mussels: Steamed mussels bathed in white wine, shallots, and tarragon.

Walley with Lemon Cream: White fish smothered in lemon butter sauce, sprinkled with lemon zest and parsley, served with green peas.
Coq au Vin: Roasted Chicken stew with carrots, garlic, rosemary, thyme, white wine, and parsley.

Chicken Fricassee with Tarragon: Chicken Stew with carrots, mushrooms, white wine.

Pork Chops au Poivre: Pan seared pork chops served with a creamy brandy sauce, green beans, and potatoes with providence herbs.
Beef  Burgundy:  Slow cooked beef with mushrooms, carrots, tomato, red wine and peas.
Crème Brûlée: Delectable vanilla or coffee .


Italian

Beet and Goat Cheese Arugula Salad: Roasted beat salad with arugula, pistachios, shaved pecorino, and balsamic vinaigrette.
Caprese Salad with Pesto: Tomato, basil, mozzerrela with balsamic and pesto.
Lentil Soup: Italian tomato lentil soup, spiced with herbs, served with white rice.
Zuppa Toscana Soup: Italian Toscan sausage soup with kale, potatoes and cream.
Bruschetas: Mozzarella, tomato, basil, or smoked salmon, cream cheese and green onion and many more options.
Flat breads: Your choice of ingredients. My recommendations are goat cheese and peppers or beef, blue cheese, bacon and arugula.

Rissoto al Fungi: Arborio rice slowly cooked with mushrooms and white wine.
Fetuccini Primavera: Classic with carrots, broccoli, zuquini, squash, and basil tossed in a light white wine cream.

Cappellini Pomodoro e Basilico: Tomatoes, fresh basil, garlic and parmesan cheese.
Spaguetti Aglio e Olio: Olive oil, garlic, chili pepper flakes, sprinkled with parmesan.
Fetuccini Alfredo: Creamy white sauce with mushrooms, ham, and parmesan.
Spaguetti Carbonara: Bacon, pecorino romano, parmesan cheese and creamy sauce.

Bolognese Lasagna: Ground beef and tomato red wine sauce, 
mozzarella and parmesan cheese.

Ravioli: Many filling options, my favorite goat cheese and mushrooms, and your choice of alfredo or marinara. 
Caneloni: Your choice of ground beef or 5 cheese in tomato cream sauce and pecorino romano.
Chicken Piccata: Chicken Breast with capers and lemon sauce.
Osso Buco: Veal Shanks  with herbs sauce, served with ciabatta bread.
Tiramisu: Coffee dessert with lady fingers and mascarpone cheese.

 

Mediterranean

Greek Salad: Tomatoes, cucumbers, red onion, feta Cheese, and kalamata olives.
Tabouli Salad: Couscous, fresh parsley, red onion, mint, lemon juice, garlic, tomatoes and olive oil.

Avgolemeno: Lemony chicken soup with rice.
Falafel: Deep fried patty made from ground chickpeas.
Spanakopita: Baked fillo pastry filled with spinach, feta cheese, ricotta cheese, and scallions.
Hummus: Chickpea dip with garlic, sesame oil, and lime juice.
Baba Ghanoush: Smoked eggplant puree, with cumin, olive oil, lime juice and parsley.
Spicy Feta Cheese Dip: Roasted red peppers, pepperoncini peppers, and lemon juice.
Dolmades: Stuffed grape leaves with rice and meat.

Kabobs: Your choice chicken, shrimp, pork or beef.
Lamb: Greek lamb pork chops with yogurt mint sauce.
Giro: Ground beef and ground lamb meatloaf.
Pita Bread: A must have side to any Mediterranean dish!

Baklava: Layers of fillo pastry filled with chopped nuts and honey.

Spain

Gazpacho: Cold tomato and vegetable soup garnished with home-style croutons.

Olivas a la Madrileña: Black olives marinated with scallions, olive oil, Spanish sweet paprika, dried oregano on focaccia bread.

Garbanzos a la Gallega: Chickpeas sautéed with garlic, chorizo and parsley oil crostini.

Creamy Mushrooms: Whole mushrooms tossed in white wine, butter, lime, cream and green onion.

Smoked Paprika Clams: Fresh clams cooked with garlic, onion, parsley, white wine and Spanish smoked paprika.

Garlic  Scallops: Pan fried Scallops with garlic, coñac and parsley.

Calamari: Fried calamari served with Italian peppers, capers, parmesan cheese and tartar sauce.

Spanish Braised Octopus: Octopus tossed in garlic, olive oil, black pepper, paprika and lemon juice.

Paella: Arborio rice mixed with shrimp, clams, mussels, scallops and spanish chorizo, spiced with garlic, onion, red pepper, saffron and white wine.

Farm House Toast: Seared pork loin,  caramelized onion, olive oil au gratin on French bread.

Buñuelos de Chorizo: Battered chorizo nibbles.

 

LATIN AMERICA

Costa Rican
Ceviche: Shrimp or fish cooked in lime juice with chopped cilantro, onions, and greed peppers, served cold with homemade chips.
Rondón: Fish soup with veggies and coconut milk, served with fried plantains.
Caribbean Rice and Beans: Mixed rice and beans cooked in coconut milk with tender caribbean-seasoned chicken drummies.
​Chifrijo
: Combination of  white rice, kidney beans, pork, and pico de gallo in a cabbage vinaigrette, served cold with homemade tortilla chips.
Sopa de Tita: Meatball soup with vegetables and homemade capellini, this is my grandma’s recipe.

Empanadas: Fried corn flour tortilla filled with your choice of beans, cheese, chicken, pork, or Costa Rican hot dish, topped with shredded cabbage and salsa.

Pescado or Camarones al Ajillo: Fish fillet or shrimp sautéed in a garlicy parsley sauce, mashed potatoes and tomato-lime salad on the side.

Lorenzo’s Red snapper: Deep fried whole fish served with heart of palm, pejiballe, pico de gallo, and fried plantains.

Arroz con Pollo: Pulled chicken with rice and veggies flavored with Costa Rican spices, served with cabbage salad and homemade chips.

Chicharrones con Yuca: Marinated pork chunks deep fried accompanied with yuca root, cabbage salad and lime. 
Gallo Pinto: Rice and beans, sautéed garlic, onions, peppers, mixed with Costa Rican spices and salsa Lizano.


Cuban

Beet Cream Bisque: Creamy beet soup with homemade bread.

Langosta Enchilada Soup: Lobster and grilled pepper soup with homemade bread.

Grilled Calamari: Fresh calamari grilled and served with chimichurri sauce.
Stuffed Fish Fillet: Fish fillet stuffed with shrimps and crabmeat drizzled in béchamel, served with asparagus.

Arroz Imperial: Baked layers of rice, chicken, and cheese, caesar salad on the side.

Cuban Roasted Chicken: Cuban flavored baked chicken with potatoes, served over rice.

Boliche: Cuban pot roast stuffed with ham, olives and chorizo, accompanied with rice and salad.

Cuban Style Pork: Baked pork marinated with Cuban mojo with papaya mango salsa.

Ropa Vieja: Cuban shredded beef with rice, beans, and salad.

Bistec Encebollado: Pan fried Cuban style steak with caramelized onions, served with rice, beans and salad.

Papa Rellena: Mashed potato deep fried patty filled with ground beef, garnished with roasted pepper sauce.

Yuca al Mojo: Yuca root cooked with olive oil, garlic and lime.

Méxican

Guacamole: Avocado dip served with homemade chips.
Aguachile de Camarón: Shrimp ceviche, Serrano peppers, cucumber and red onion.

Sopa Azteca: Tomato base chicken soup with chipotle pepper, topped with fried tortillas, lettuce, sour cream, cilantro, and cheese.
Pozole: Pork and corn soup topped with lettuce and radish, cream, and cilantro.
Frijoles Charros: kidney bean soup with chicharrón, chorizo, pork chops, bacon, and chipotle.
Huevos Rancheros: Fried eggs on top of a fried tortilla with tomato, onion, garlic and chile sauce.
Enchiladas: Tortillas tossed in chili sauce and filled with cheese and onion, topped with sour cream, lettuce and radish.
Sopes: ​Corn flour patty tossed in chili sauce filled with your choice of meat, topped with lettuce , avocado, sour cream and cheese.
Enmoladas: Corn tortillas filled with chicken and cover on mole poblano, served with Mexican rice and lettuce, tomato salad.
Flautas: Deep fried tacos filled with your choice of meet and topped with sour cream, lettuce and cheese.
Tostadas: Corn shell tortilla topped with refried beans your choice of meat, pico de gallo, and salsa cruda.
Tacos: Pastor, carnitas, pollo or puerco, topped with onion, cilantro and guajillo chile pepper aioli .
Chiles Rellenos: Battered stuffed peppers served with refried beans and Mexican rice.
Cochinita Pibil: Slow cooked shredded pork leg marinated in achiote, orange juice, lime juice and spices, served with corn tortillas and pickled red onion.
Flan: Vanilla, coconut, coffee.
Churros: Fritters with dulce de leche.


Peruvian

Aguacate Relleno:​ Avocado filled with sautéed shrimp in a brandy cream au gratin.

Chupe de Camarón: Creamy shrimp and pepper soup. 

Jalea de Mariscos: Deep fried battered seafood, served with a red onion tomato salad and fried yuca. 
Tiradito de Pescado: Raw fish cut sashimi style with yellow ají aioli.
Ají de Gallina: Peruvian spicy creamed chicken, served with rice. 
Brocheta Mar y Tierra: Tenderloin, chicken, sea bass and shrimp kabob served with lettuce, tomato, and cucumber-lime salad.
Lomo Saltado: Sautéed tenderloin with onions, peppers, soy sauce, and French fries. 

Suspiro Limeño: Limey custard pudding meringue topping sprinkled with cinnamon.
